Marinate chicken for at least 30 minutes or up to 3 hours. 2. Prepare tomato & cucumber salad and marinated chickpeas. 3. Grill chicken at 400°F for 12 minutes or until the internal temp is at least 165°F. Chop the chicken into bite sized pieces. 4. 2026-06-04 15:24 Video 2026-05-13 01:57:33 Broccoli Cheddar Chicken Nuggets šŸ„¦šŸ§€šŸ— Fun for kids and adults, easy way to get in protein and veggies and their air fried, so leaner than traditional chicken nuggets! 1lb ground chicken 1 cup broccoli florets 2 oz finely grated extra sharp cheddar cheese 1 tsp each garlic powder, onion powder, paprika (divided) 1/2 tsp salt and black pepper (divided) 1 egg, beaten 1/2 cup panko breadcrumbs 1/2 cup regular breadcrumbs 1. Blanch broccoli florets for two minutes. Add to an ice water bath to stop cooking. Chop florets into small pieces. 2. In a mixing bowl, combine ground chicken, blanched broccoli, cheddar cheese, half of the seasonings and the egg. Gently mix until everything is well incorporated. 3. Scoop chicken mixture and shape into a chicken nugget. Grease your hands with oil spray to help prevent sticking. Place chicken nuggets on a parchment lined baking sheet and freeze for 15 minutes. 4. On a plate, combine breadcrumbs and remaining seasoning. Bread each chicken nugget and then place on an air fryer basket. Ingredients 2 tsp avocado oil 1 zucchini, diced 1/2 onion (approx. 3/4 cup) diced 1/2 red bell pepper (approx. 3/4 cup) diced1 lb ground turkey 2 cloves garlic minced 15 oz can diced tomatoes 1 packet taco seasoning 1/2 cup corn 1/2 cup black beans 1/2 cup shredded cheddar or Mexican blend cheese Instructions 1. Heat 2 teaspoons of avocado oil in a large skillet over medium heat. Add the zucchini and cook for 2-3 minutes. Flip zucchini and cook on the other side for another 1-2 minutes. Remove zucchini from the pan and set aside. 2. Reduce the heat to medium. Add onion and bell pepper to the skillet. SautĆ© veggies for 3-4 minutes, stirring frequently. 3. Add ground turkey and cook, while breaking up meat with a wooden spoon, until browned. Drain excess fat, if needed. 4. Add garlic and cook for one minute. Add diced tomatoes, taco seasoning, corn and black beans. Mix so everything is coated in the seasoning. Cook until the sauce has thickened, approximately 5 minutes. 5.
